GERMAINE ENNIS

Germaine Ennis- His passion for cooking has led to this journey focused on sharing his rich island cuisine with the world. Germaine  is committed to creating memorable experiences through 1188 Jamaica Kitchen. As a child, on Sundays, in order to earn an extra piece of fried chicken, he would help his mother to prepare dinner. He would cut, wash and season chicken and help with cleaning once dinner was done. Every week he would get another task added to his list and with each task he grew in confidence and fell in love with the art of making authentic Jamaican Food. Fast forward a few years and his mother opened a restaurant in a small community in St Elizabeth Jamaica. Some mornings Germaine would help his mother get started for the day before school and help to close in the evenings after school. Germaine and his siblings ran the restaurant on weekends which gave his mother some much need rest. Now it's 2026 , and with skill and passion, Germaine is excited to give his customers a taste of the big flavors from a small island.
